This helps to develop your transferable and subject-specific skills and provides evidence of skills and experience to employers. It is also a valuable opportunity to learn from highly experienced colleagues and can help you to discover your particular area of interest within the sector.

  3. Hotel management structure
The size and complexity of a hotel management organizational structure varies significantly depending on the size, features, and function of the hotel or resort. A small hotel operation normally may consist of a small core management team consisting of a Hotel Manager and a few key department supervisors who directly handle day-to-day operations. On the other hand, a large full-service hotel or resort complex often operates more similarly to a large corporation with an executive board headed by the General Manager and consisting of key directors serving as heads of individual hotel departments. Each department at the large hotel or resort complex may normally consist of subordinate line-level managers and supervisors who handle day-to-day operations.

  4. Working conditions for Hotel Management Professional
Hotel managers are generally exposed to long shifts that include late hours, weekends, and holidays due to the 24-hour operation of a hotel. The common workplace environment in hotels is fast-paced, with high levels of interaction with guests, employees, investors, and other managers.
Upper management consisting of senior managers, department heads, and General Managers may sometimes enjoy a more desirable work schedule consisting of a more traditional business day with occasional weekends and holidays off.
Depending on the size of the hotel, a typical hotel manager's day may include assisting with operational duties, managing employee performance, handling dissatisfied guests, managing work schedules, purchasing supplies, interviewing potential job candidates, conducting physical walks and inspections of the hotel facilities and public areas, and additional duties. These duties may vary each day depending on the needs of the property. The manager's responsibility also includes knowing about all current local events as well as the events being held on the hotel property. Managers are often required to attend regular department meetings, management meetings, training seminars for professional development, and additional functions. A hotel/casino property may require additional duties regarding special events being held on property for casino complimentary guests.

  5. Curriculum
In the United States, hospitality and tourism management curricula follow similar core subject applications to that of a business degree, but with a focus on hospitality management. Core subject areas include accounting, administration, finance, information systems, marketing, human resource management, public relations, strategy, quantitative methods, and sectoral studies in the various areas of hospitality business.
    Vegetarian Option
In 2016, Ministry of Tourism, Government of India started giving hospitality management students the option to choose only vegetarian cooking. This was introduced at three of the institutes (IHMCTAN Ahmedabad, IHMCTAN Bhopal and IHMCTAN Jaipur) affiliated with the Ministry. Earlier, similar to the curriculum pattern in most culinary institutes of the world, it was compulsory for all IHMCTAN students to learn non-vegetarian cooking. This decision to offer a vegetarian option by IHMCTANs may be the first amongst any of the hospitality training institutes of the world. It is expected that all IHMCTANs in India will start offering a vegetarian cooking option from academic year 2017 onwards.[2][3]

  8. Hotel John Marshall
    Original development
The Hotel John Marshall, located on Fifth Street between Franklin and Grace in downtown Richmond, Virginia, opened its doors on October 30, 1929, the day after the Wall Street Crash.[1] The opening night ceremony included dinner for 600 guests, amongst which were both the City Mayor, J. Fulmer Bright, and the Virginia Governor Harry F. Byrd.[1]
The hotel’s construction was funded by businessman Thomas Gresham, of the Richmond Hotels, Inc., to which hotel group The John Marshall originally belonged.[2] Architect Marcellus E. Wright Sr., who had studied at The Philadelphia School of Applied Art, designed the 16-story building in a neoclassical style with touches of deco and Moorish ornament.[1] It cost $2 million to build, and the general contractor was Wise Granite and Construction Co.[1] With 418 guest rooms, 500 bathrooms, 2 restaurants in ballrooms in the lobby and a roof garden ballroom on the 16th floor, it was the largest hotel in the state when it opened.[1] It is said that the name was chosen by a suggestion contest, with the winning name paying tribute to Chief Justice John Marshall, whose house, now a museum, sits only a few blocks away.[1]

  11. History Of Chinese Cuisine

Dàzhǔ gānsī is a typical soup dish of Huaiyang cuisine. It is made of finely sliced dried tofu, chicken, ham and bamboo shoot, and ingredients need to be braised with shrimp in chicken soup. It was highly praised by Qianlong emperor
Steamed whole perch with roe inside. Sliced ginger and spring onion is usually spread on top.
Chinese society greatly valued gastronomy and developed an extensive study of the subject based on its traditional medical beliefs. Chinese culture initially centered around the North China Plain. The first domesticated crops seem to have been the foxtail and broomcorn varieties of millet, while rice was cultivated in the south. By 2000 BC, wheat had arrived from western Asia. These grains were typically served as warm noodle soups, however, instead of baked into bread as in Europe. Nobles hunted various wild game and consumed mutton, pork, dog, and beef as these animals were domesticated. Grain was stored against famine and flood and meat was preserved with salt, vinegar, curing, and fermenting. The flavor of the meat was enhanced by cooking it in animal fats though this practice was mostly restricted to the wealthy.
By the time of Confucius in the late Zhou, gastronomy has become a high art. He was recorded discussing about the principles of dining: "The rice would never be too white, the meat would never be too finely cut... When it was not cooked right, man would not eat. When it was cooked bad, man would not eat. When the meat was not cut properly, man would not eat. When the food was not prepared with the right sauce, man would not eat. Although there are plenty of meat, they should not be cooked more than staple food. There is no limit for alcohol, before a man get drunk." [8] During Shi Huangdi's Qin dynasty, the empire expanded into the south. By the time of the Han Dynasty, the different regions and cuisines of China's people’s were linked by major canals and leading to greater complexity in the different regional cuisines. Not only is food seen as giving "qi", energy, but food is also about maintaining yin and yang.[9] The philosophy behind it was rooted in the I Ching and Chinese traditional medicine: food was judged for color, aroma, taste, and texture and a good meal was expected to balance the Four Natures ('hot', warm, cool, and 'cold') and the Five Tastes (pungent, sweet, sour, bitter, and salty). Salt was used as a preservative from early times, but in cooking was added in the form of soy sauce, and not at the table.[10] The predominance of chopsticks and spoons as eating utensils also necessitated that most food be prepared in bite-sized pieces or (as with fish) be so tender that it could be easily picked apart.
By the Later Han period (2nd century), writers[who?] frequently complained of lazy aristocrats who did nothing but sit around all day eating smoked meats and roasts.
During the Han dynasty, the Chinese developed methods of food preservation for military rations during campaigns such as drying meat into jerky and cooking, roasting, and drying grain. Chinese legends claim that the roasted, flat bread shaobing was brought back from the Xiyu (the Western Regions, a name for Central Asia) by the Han dynasty General Ban Chao, and that it

Example of Large/Full Service Hotel or Resort Complex
A typical organizational chart for a large resort hotel operation may often resemble the following:
General Manager reports to a Regional Vice President and/or Ownership/Investors
    • General Manager[1] or Managing Director
    • Assistant General Manager or Resident Manager
    • Director of Operations or Rooms Division
    • Director of Front Office or Front Office Manager
    • Front Desk Manager (Shift Manager)
    • Bell Captain
    • Chief Concierge
    • Valet Captain or Parking Manager
    • PBX/Communications Manager
    • Overnight Manager or Head Night Auditor
    • Director of Housekeeping or Executive Housekeeper
    • Assistant Director of Housekeeping or Executive Housekeeper
    • Floor Manager (Shift Manager)
    • Laundry Manager
    • Director of Revenue Management or Revenue Manager
    • Reservations Manager
    • Director of Sales & Marketing

    • Banquets Manager
    • Director of Events and Catering
    • Assistant Director of Events
    • Convention Services Manager
    • Event Manager
    • Catering Manager
    • Director of Finance
    • Accounting Manager
    • Payroll Manager
    • Purchasing Manager
    • Director of Engineering
    • Chief Engineer
    • Maintenance Manager
    • Facilities Manager
    • Director of Human Resources
    • Human Resources Manager
    • Recruiting Manager
    • Training Manager
    • Labor Relations Manager (For Unionized Hotels)
    • Chief of Security
    • Recreation Manager
    • Information Technology Manager
Additional Management Positions may exist for additional facilities such as hotel-owned golf courses, casinos, or spas.
    Example for Small/Limited service hotel
A typical organizational chart for a small low-rise hotel operation may resemble the following:
Hotel Manager reports to Regional Director and/or Ownership/Investors
    • General Manager
    • Guest Service Manager (Front of House)
    • Housekeeping Manager
    • Chief Engineer
    • Sales & Marketing Manager
    • Food & Beverage Manager
Administrative functions for a small-scale hotel such as Accounting, Payroll, and Human Resources may normally be handled by a centralized corporate office or solely by the Hotel Manager. Additional auxiliary functions such as security may be handled by third-party vendor services contracted by the hotel on an as-needed basis. Hotel management is necessary to complete the look of the hotel.
    Typical qualifications
The background and training required varies by the type of management position, size of operation, and duties involved. Industry experience has proven to be a basic qualification for nearly any management occupation within the lodging industry. A BS degree in Hospitality Management or an equivalent Business degree is often strongly preferred by most employers in the industry but not always required.
